Spiced Chickpea & Tahini Sandwich

Ingredients
- 4 slices of sourdough or pita bread
- 1 cup canned chickpeas, drained and mashed
- 2 tbsp Tal’s Mediterranean tahini
- 1 tbsp lemon juice
- 1 tbsp olive oil
- ½ tsp cumin
- ½ tsp smoked paprika
- ¼ tsp sea salt
- ¼ tsp black pepper
- ½ small cucumber, thinly sliced
- ½ small tomato, thinly sliced
- ¼ red onion, thinly sliced
- Handful of fresh parsley or arugula
- Optional: crumbled feta or vegan feta alternative

Methods
- In a bowl, mix mashed chickpeas with tahini, lemon juice, olive oil, cumin, smoked paprika, salt, and pepper until well combined.
- Lightly toast the bread or pita.
Spread a generous layer of the chickpea-tahini mixture onto one slice of bread. - Top with cucumber, tomato, red onion, and fresh greens. Add feta if using.
- Place the second slice of bread on top, press gently, and enjoy!
Serving Tip: Pair with a side of hummus or a crisp Mediterranean salad for a full meal.
