Spiced Chickpea & Tahini Sandwich

  • Ingredients

    • 4 slices of sourdough or pita bread
    • 1 cup canned chickpeas, drained and mashed
    • 2 tbsp Tal’s Mediterranean tahini
    • 1 tbsp lemon juice
    • 1 tbsp olive oil
    • ½ tsp cumin
    • ½ tsp smoked paprika
    • ¼ tsp sea salt
    • ¼ tsp black pepper
    • ½ small cucumber, thinly sliced
    • ½ small tomato, thinly sliced
    • ¼ red onion, thinly sliced
    • Handful of fresh parsley or arugula
    • Optional: crumbled feta or vegan feta alternative
  • Methods

    1. In a bowl, mix mashed chickpeas with tahini, lemon juice, olive oil, cumin, smoked paprika, salt, and pepper until well combined.
    2. Lightly toast the bread or pita.
      Spread a generous layer of the chickpea-tahini mixture onto one slice of bread.
    3. Top with cucumber, tomato, red onion, and fresh greens. Add feta if using.
    4. Place the second slice of bread on top, press gently, and enjoy!

    Serving Tip: Pair with a side of hummus or a crisp Mediterranean salad for a full meal.
