Mediterranean Sandwich Recipe

Ingredients
- 2 large pita bread or soft flatbreads (you can also use whole wheat or gluten-free pita)
- 1 cup of homemade or store-bought Babaganoush (eggplant dip)
- 1 cup of mixed greens (such as spinach, arugula, or lettuce)
- ½ cucumber, thinly sliced
- 1 small tomato, thinly sliced
- ¼ red onion, thinly sliced
- 2 tablespoons of hummus
- 2 tablespoons of crumbled feta cheese (optional)
- 1 tablespoon of fresh parsley, chopped
- Olive oil for drizzling
- A pinch of sea salt and black pepper
- A squeeze of lemon juice

Methods
Prepare the Pita/Flatbread:
If using pita, carefully cut each pita in half to create pockets, or if using flatbread, simply warm it slightly to make it more pliable.
Lightly toast the pita or flatbread on a pan for about 1-2 minutes on each side for extra texture.
Spread the Babaganoush:
Spread a generous layer of Babaganoush inside each pita pocket or on the flatbread. This creamy, smoky eggplant dip will serve as the base flavor for the sandwich.
Add Vegetables:
Layer the thinly sliced cucumber, tomato, and red onion over the Babaganoush, creating a fresh, crunchy contrast to the creamy texture of the dip.
Drizzle with Hummus:
Spread a thin layer of hummus over the veggies for an added creamy texture and subtle flavor. You can even add a little extra on top of the Babaganoush before adding the veggies.
Finish with Cheese and Herbs:
If desired, sprinkle crumbled feta cheese over the veggies for an extra layer of Mediterranean flavor. Garnish with fresh parsley and a light drizzle of olive oil.
Season to Taste:
Add a pinch of sea salt, freshly ground black pepper, and a squeeze of lemon juice to balance the flavors and bring everything together.
Serve:
Serve the sandwiches immediately, with an optional side of pickled vegetables or olives for a more authentic Mediterranean experience.
