Grilled Veggie & Babaganoush Panini

  • Ingredients

    • 4 slices sourdough or ciabatta bread
    • 1 cup Tal's Babaganoush
    • 1 red bell pepper, sliced
    • 1 zucchini, thinly sliced lengthwise
    • 1 eggplant, sliced into rounds
    • 2 tbsp olive oil
    • ½ tsp dried oregano
    • ½ tsp smoked paprika
    • Salt and pepper to taste
    • 4 slices mozzarella or provolone cheese (optional)
  • Methods

    • Preheat a grill or panini press.
    • Toss bell pepper, zucchini, and eggplant with olive oil, oregano, paprika, salt, and pepper. Grill the vegetables until tender.
    • Spread Tal's Babaganoush generously on one side of each bread slice.
    • Layer the grilled vegetables and cheese (if using) between two slices of bread.
    • Place the sandwich in the panini press or skillet, cooking until the bread is golden and crisp, and the cheese melts.
    • Slice in half and serve with a fresh side salad.
