Grilled Veggie & Babaganoush Panini

Ingredients
- 4 slices sourdough or ciabatta bread
- 1 cup Tal's Babaganoush
- 1 red bell pepper, sliced
- 1 zucchini, thinly sliced lengthwise
- 1 eggplant, sliced into rounds
- 2 tbsp olive oil
- ½ tsp dried oregano
- ½ tsp smoked paprika
- Salt and pepper to taste
- 4 slices mozzarella or provolone cheese (optional)

Methods
- Preheat a grill or panini press.
- Toss bell pepper, zucchini, and eggplant with olive oil, oregano, paprika, salt, and pepper. Grill the vegetables until tender.
- Spread Tal's Babaganoush generously on one side of each bread slice.
- Layer the grilled vegetables and cheese (if using) between two slices of bread.
- Place the sandwich in the panini press or skillet, cooking until the bread is golden and crisp, and the cheese melts.
- Slice in half and serve with a fresh side salad.
