Grilled Vegetables Skewers

  • Ingredients

    1 zucchini, sliced into rounds

    1 yellow
    squash, sliced into rounds

    1 red bell pepper, chopped into squares

    1 red onion, cut into chunks

    1 cup cherry tomatoes

    2 tbsp olive oil

    1 tsp za’atar or Italian seasoning

    Salt and pepper to taste

    Tal's Babaganoush (for dipping)

     

  • Methods

    1. Prepare the Vegetables: In a large bowl, toss the zucchini, squash, bell pepper, onion, and cherry tomatoes with olive oil, seasoning, salt, and pepper.
    2. Assemble the Skewers: Thread the vegetables onto skewers, alternating for color and variety.
    3. Grill the Skewers: Preheat the grill to medium heat. Grill the skewers for 10-12 minutes, turning occasionally, until the vegetables are slightly charred and tender.
    4. Serve: Transfer the skewers to a serving platter. Place a bowl of Tal's Babaganoush at the center for dipping.
