Earthy Roasted Beets w/ith Tahini and Capers
Let the beets drop! We love earthy sweet beets. Beets are an excellent source of iron and fiber. Sesames are an ideal source of plant-protein, healthy fat, and calcium! Together they make a colorful side dish that will leave you energized and satisfied.

Ingredients
- 4 medium beet roots
- 4 tbsp capers
- 1 tbsp olive oil
- 4 tbsp Tal's Tahini Classic Lemon Fresh
- Salt and pepper to taste

Method
- Preheat the oven to 425°F (220°C).
- Place the wrapped beets on a baking sheet and bake for 45-90 minutes, depending on the size of the beet. The beets are ready when you can easily pierce them with a fork.
- Slice off the root end and top of each beet. Using a kitchen towel or paper towel, rub the skin off the beets; it should come off easily. Discard the skins.
- Slice each beet into 1/4-inch medallions, then toss them in a bowl with 1 tbsp of olive oil, capers, salt, and pepper.
- Plate the beets and drizzle with Tal's Tahini Classic Lemon Fresh, or leave the tahini in a separate bowl so guests can drizzle it over their dish individually.
