Thanksgiving Roasted Roots Medley

Ingredients
- 1 large collard green or lettuce leaf (for the wrap)
- 1/2 cup cucumber, julienned
- 1/2 cup mixed bell peppers, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 2 tbsp tahini Fresh herbs (parsley, cilantro, or mint)

- Prepare the Leaf:
If using collard greens, trim the thick stem and lightly steam for 30 seconds to soften. If using lettuce, no prep needed! - Assemble the Fillings:
Lay the cucumber, bell peppers, and cherry tomatoes in the center of the leaf. - Drizzle with Tahini:
Pour the tahini over the veggies for creaminess and flavor. - Add Fresh Herbs & Wrap:
Sprinkle with chopped parsley, cilantro, or mint.
Fold in the sides and roll up tightly like a burrito.
