Creamy Tahini Potato Salad

Ingredients:
- 4 large potatoes, peeled and diced into small squares
- Water for boiling
- Salt for boiling
- Tals Tahini Fresh Garden Herbs
- 2 tablespoons capers, drained
- 2 green onions, thinly sliced (for garnish)

Method:
Boil the Potatoes:
- Place the diced potatoes in a pot and cover with water. Add a pinch of salt to the water.
- Bring the water to a boil, then reduce the heat to medium and simmer the potatoes for about 10-15 minutes, or until they are fork-tender.
Prepare the Tahini Dressing:
- While the potatoes are boiling, prepare the tahini dressing. In a small bowl, whisk together the FUN Sesames Tahini Blend with a splash of water to thin it out slightly, if needed. You want a creamy but pourable consistency.
Assemble the Salad:
- Once the potatoes are cooked, drain them well and transfer them to a large mixing bowl.
- While the potatoes are still warm, pour the prepared tahini dressing over them.
- Gently toss the potatoes until they are evenly coated with the tahini dressing, creating a creamy layer over the potatoes.
Garnish:
Sprinkle the drained capers over the top of the potato salad.
Garnish with thinly sliced green onions for added flavor and color.

- Transfer the potato salad to a serving dish and serve warm or at room temperature.
