Lush Layers with Lemon Tahini

2 slices of artisan sourdough bread, ciabatta rolls, or pita bread
4–5 tablespoons of Tal’s Classic Lemon Tahini
1 roasted red pepper (jarred or freshly roasted), sliced
½ cup of grilled or roasted zucchini slices
½ avocado, sliced
1 cup of mixed greens (like arugula, spinach, or baby kale)
¼ red onion, thinly sliced
2 tablespoons of crumbled feta cheese (optional for extra creaminess)
2 tablespoons of pickled turnips (optional for an authentic Mediterranean twist)
Optional Additions:

A drizzle of pomegranate molasses for sweetness
A sprinkle of za’atar seasoning
Instructions
Prepare the Bread:

Lightly toast the bread slices or warm the pita on a skillet for 1–2 minutes to enhance the texture.
Spread the Tahini:

Generously spread Tal’s Classic Lemon Tahini on both slices of bread or the inside of the pita.
Assemble the Sandwich:

Layer one slice of bread with mixed greens as the base.
Add the roasted red pepper slices, grilled zucchini, and sliced avocado.
Top with thinly sliced red onion and pickled turnips for added crunch and tang.
Sprinkle with crumbled feta (if using) and a dash of za’atar for extra Mediterranean flair.
Finish with Flavor:

Drizzle a small amount of pomegranate molasses over the top if you prefer a hint of sweetness.
Close and Serve:

Top with the second slice of bread, press gently, and slice the sandwich in half.
Serve immediately with a side of tabbouleh, lentil soup, or a fresh cucumber-tomato salad.
